Sometimes moms get tired and just need to be.  They get tired of thinking too much and planning all the time.  When moms are in being mode, dads usually have to take over.  Moms then, are grateful, a bit tearful and let dads cook, while they sit, and sip on wine which was a gift from a friend.

On days like this I appreciate my being time, the delicious, simple, but tasty dinner, friendly chatter around the dinner table, washed dishes, and vanilla tea.

I am grateful for the blessing of family, for being able to hear their stories, for the ability to feel their hearts, and for the understanding to sense their energy.

I am grateful for a creative husband, and I am grateful to share a Mom on Thyme recipe:

Mushroom Pasta:

Enough for 6 adults

Total cost: R120


500 gr macaroni

400 gr mushrooms

2 packets of diced bacon (200 gr each)

250 ml cream

1 clove garlic, crushed

1 tsp grated ginger

Handful of grated white cheese

Black pepper to taste

2 tablespoons of sunflower oil

Brown bacon in oil.  When bacon is cooked, lower heat and add garlic and ginger.  Stir, and let flavours mix.  Add mushrooms and simmer until mushrooms are hot but not cooked.  Add cream and bring to a boil.  Simmer for 10 minutes while you cook the pasta.  Add cheese to bacon mix to thicken cream.  Pour over cooked pasta and mix.  Season with black pepper to taste.  Serve in bowls with freshly chopped basil – or any fresh herbs.
